Dip chasen in water to loosen the chasen straws.
The 30-20-10 Rule of Whisking:
- Sift 2-3 grams of matcha through a strainer.
- Pour 15ml-20ml of water into the bowl. Initially, using the chasen, gently dab the matcha, using circle motions and mini circle motions until it forms a creamy consistency.
- Pour the remaining 15ml-20ml of water.
- Vigorously whisk for about 30-40 seconds (recommended motions: to & fro, circle, W, or a zig-zag motion).
- Slow down and whisk for about 20 seconds (recommended motions: to & fro, circle, W, or a zig-zag motion).
- For the last 10 seconds, glide the whisk around the bowl.
Place the chasen into water afterwards.
The Degrees of Water
- Use warm water, 70-80 degrees Celsius.
- Boiling water breaks down the chlorophyll into pheophytin, which gives it a dull, bitter, and flat taste.
- The hotter the water, the more dull and bitter the taste will be.

What âgradeâ is your matcha? We donât use grades like âceremonialâ or âculinary.â Sunshine Matcha is late-harvest for a bold, smooth flavor that shines in lattes (hot or iced) without harsh bitterness.
How many cups per 40g? At 2g per serving ~ 20 cups per 40g (=R20 per cup)
Will it be bitter?Using the the right temperature of water. We recommend staying within 70-80 degree range. Using too hot water can make the matcha bitter & dull. Whisk: 30-40seconds, vigorously. 20seconds slowly and 10 seconds of glide
Do I need a bamboo whisk? Helps with foam and texture. A milk frother or shake in a sealed bottle works too.
Caffeine content? Less than most coffees, paired with L-theanine for calm energy.
Storage: Keep sealed, cool, dry, and out of direct light. Refrigerate sealed if needed (bring to room temp before opening).
Sweetened/flavored? No â 100% pure matcha, nothing added.
Why is the color different? Late-harvest matcha has a deep green for fuller taste, great in milk drinks.
